Macadamia & Date Chocolate Fudge

We love to make a batch of this fudge and keep it in the freezer for any late night cravings! Macadamia nuts and dates make the most amazing combo but feel free to use whatever ingredients you have in your pantry. Make sure and keep this in the freezer and take it out just a few minutes before serving because the coconut oil will make it melt at room temp. Unless you want to eat lots of melted gooey fudge -  we've all been there!

The cacao powder in this recipe means you’re getting a great amount of magnesium (a type of mineral). Magnesium is a natural stress reliever and plays a role in over 300 enzyme systems in your body. It helps to produce energy, synthesise muscle and bone, and supports your nervous system – among MANY other things. Highly stressed people or those that exercise a lot should aim to include more magnesium in their diet. If you don’t get enough it puts you at risk of osteoporosis, type 2 diabetes and heart disease. Plus cashew nuts have lots of magnesium so it's a double win! Cacao powder also contains a huge amount of flavonoids, a type of antioxidant. These have anti-inflammatory and immune boosting effects in our bodies. Cashew nuts also contain a range of antioxidants, like the carotenoids lutein and zeaxanthin. These are crucial for healthy vision and protect against light damage from UV rays and cataracts.


  • 1 cup cashew butter (or any nut butter)
  • 3 TBSP coconut oil
  • 1.5 TBSP cacao butter*
  • cacao powder
  • 1 tsp vanilla extract
  • 4 TBSP honey/maple syrup
  • 50g  macadamia nuts (crushed/roughly chopped)
  • ~8 dates (roughly chopped)
  • handful goji berries (optional)
  • pinch of sea salt flakes

*The cacao butter adds a really nice creaminess but feel free to exclude if you don't have it!


  • Melt the coconut oil and cacao butter over a low heat.
  • In a mixing bowl, combine the melted oil with the cashew butter.
  • Next mix in the honey/maple and vanilla.
  • Then add the cacao powder followed by the macadamia nuts (save a few for the topping) and dates.
  • Pour into a bread loaf tin that's lined with parchment paper.
  • Top with a sprinkle of macadamias and goji berries.
  • Leave in the freezer to set for ~90 minutes.
  • Cut into bite-sized squares and store in a sealed container in the freezer.
