There's nothing better than having a stash of energy balls on hand. We love to make a batch at the weekend so we have our snacks sorted for the week ahead. White chocolate & pistachio makes the most addictive combo so be ready to get hooked!
If you're looking for a balanced snack then it doesn't get much better than this! Nuts are full of heart-healthy fats and energy-sustaining protein (say goodbye to cravings!). Dates are our go-to natural sweetener but they offer so much more than a sugary taste. Dates are bursting with so much fibre that they're actually a low GI food, stopping your blood sugar from spiking. They also provide a ton of minerals like magnesium and potassium so maybe now you know why they're sometimes called 'nature's power fruit'. Has anyone else ever just sat down with some peanut butter and Medjool dates and got up feeling like superwoman?
100g cashew butter
60g pistachios (raw or roasted)
75g dates (if the dates are quite dry then you can soften them in boiling water for 10 minutes, this will help when blending)
10g dessicated coconut
1/2 tsp vanilla extract
50g chocolate (we used Raise the Bar white chocolate with matcha)
Add the cashew butter, pistachios, dates, coconut & vanilla to a food processor. Blend for roughly 5 minutes or until the mixture is sticky enough to form a ball.
Roll the mixture between your hands to make 8 evenly sized balls and place on greaseproof paper.
Melt the chocolate over a bain-marie. Spoon the chocolate over the balls and decorate with a whole/chopped pistachio.
Leave to set in the fridge for half an hour before serving.
