Kinda don’t know what we did before energy balls? I mean, we probably just ate peanut butter straight from the tub (and still do)! These on-the-go snacks are a firm favourite of ours and we love the endless combinations you can make. This one uses some really simple pantry ingredients but mix of peanut butter, chocolate, and a pinch of salt is a big winner. Not feeling some of these ingredients? Mix and match with whatever you’d like!
So many people are scared of eating too many nuts. Obviously there’s a limit but it’s time to stop worrying about the scales and look at the big picture. These little bundles of joy are packed with healthy fats, proteins, antioxidants, and magnesium. And because they’re rich in the amino acid arginine they can actually promote fat burning!
170g peanut butter
1-2 TBSP maple syrup (use as much or as little as you like)
1/2 tsp vanilla extract
4-5 TBSP oats (depending on how liquid your peanut butter is)
1 TBSP chia seeds
2-3 medjool dates (remove stone)
1/2 tsp coconut oil
pinch of sea salt
Blend the oats using a food processor to make a flour.
Combine the peanut butter, maple syrup, and vanilla extract in bowl.
Chop the dates into small chunks and add to the mixture.
Then add the oat flour and chia seeds and mix well.
Roll the mixture into balls using your hands (it should make about 5-7).
If using, melt the chocolate and coconut oil in a small pot on a low heat.
Drizzle the chocolate over the top of each energy balls and sprinkle with sea salt and chia seeds.
