Peanut Butter & Raisin Flapjacks

This is just the kind of thing we love to meal prep for the week ahead. Most people don’t want to spend a valuable day off in the kitchen for hours but having a few meals and snacks prepared can make such a difference throughout the week. That’s why we love this recipe! It takes less than 10 minutes to pull together and makes the perfect on the go breakfast or snack!

We love using oats in our recipes because they’re packed with fibre and keep you full for hours. On top of keeping your hunger at bay, oats are great for your gut and can help lower your cholesterol. Plus the nuts and seeds adds some important protein and unsaturated fat to this recipe.


  • 2 cups oats (use GF certified if needed)

  • 3 TBSP raisins

  • 3 TBSP coconut oil

  • 3 TBSP seed mix (we used pumpkin, linseed and sesame)

  • 1 TBSP chia seeds

  • 2.5 TBSP honey

  • 2 TBSP peanut butter


  • Preheat your oven to 180°C and line an 8x8 brownie tin with parchment paper.

  • Melt the peanut butter, coconut oil, and honey in saucepan on a low heat.

  • Add the oats and the melted peanut butter, oil and honey mixture to a food processor.

  • Using an ‘S’ blade, blend the mixture together on a low setting for about 10 seconds.

  • Add the sultanas, seed mix, and chia seeds to the food processor and blend for another 10 seconds. The mixture should stick together when pressed.

  • Press the mixture evenly into the brownie tin.

  • Bake in the oven until golden brown — about 20 minutes.

  • Wait until these have cooled completely before cutting into squares.
