We’re addicted to almond butter but hazelnut butter is definitely a close contender. Plus when you combine it with cacao powder you’ve got yourself some Nutella (or Notella as we like to say!). All you need is a food processor and 10 minutes and you’ve created the perfect snack for the week.
Unlike actual Nutella, these are low in sugar and nutrient-dense! Cacao powder and nuts are full of de-stressing magnesium and a whole range of antioxidants to fight off free radicals — helping to protect you from chronic disease. You're also getting some heart-healthy and anti-inflammatory unsaturated fats.
200g hazelnuts (we roasted ours first for a richer flavour)
1 TBSP maple syrup
1 TBSP coconut oil (melted)
½ vanilla bean paste or extract
2 TBSP cacao powder
2 TBSP cacao nibs
pinch of salt
Using a food processor with a S blade, blend the hazelnuts until it forms a fine and sticky flour (you might need to stop and scrape down the sides a few times).
Next add the maple syrup, coconut oil, and vanilla and blend until well combined.
Then add in the cacao powder and blend until the mixture sticks together well (as the nuts get blended more oil is released from them so hang in there!).
Finally mix in the cacao nibs and a pinch of salt.
Roll the mixture into balls and store in the fridge.
