Overnight oats are a game-changer for busy mornings. It's such an easy way to save time and makes sure you get in a nutritious breakfast. Oh and of course it tastes good, especially with the addition of peanut butter.
This is one of the most fibre-filled breakfasts you'll find. Oats are an amazing source of fibre but the addition of chia seeds really gives this recipe a much needed fibre boost — a typical bowl of porridge might only have 10% of your daily fibre needs! And with only 20% of Irish people getting enough fibre, adding some chia seeds is a really easy way to get in a little more. Top with things like hemp seeds, flaxseed and fruit for one supercharged brekkie!
- 90g oats (use certified gluten-free if required or quinoa flakes)
- 190ml milk of choice
- 2 TBSP chia seeds
- 2 TBSP peanut butter
- 1 tsp maple syrup

- Combine all of the ingredients in a jar or a sealed container and mix well.
- Leave to set in the fridge overnight — you can add your favourite toppings now or in the morning.
