The combination of cashew butter and vanilla creates the most amazing cookie dough flavour! Combined with caramel-like dates and chocolatey cacao powder these are such a treat.
Cashew nuts are full of heart-healthy fats and energy-sustaining protein so they make the perfect base for this recipe. Plus they’re loaded with minerals like magnesium and potassium. We’ve used dates to sweeten these energy balls because they offer so much more than a sugary taste. They contain so much fibre that they're actually a low-GI food (stopping your blood sugar from spiking). They’re also packed with a ton of minerals — which is why they’re sometimes called 'nature's power fruit'. To top this recipe off, the cacao powder and cacao nibs help boost your energy and mood because they’re rich in theobromine which stimulates the release of endorphins — these have an anti-depressant effect.
200g cashew butter
3-4 large dates (soft and pitted)
1/2 tsp vanilla bean paste/extract
1 TBSP cacao powder
2.5 TBSP coconut flour
2 TBSP cacao nibs
1 TBSP mixed seeds (we used a mix of pumpkin, sunflower, and flax)
Using a food processor, blend the cashew butter with the dates and vanilla.
Add to a mixing bowl and mix in the coconut flour and cacao powder.
Next mix in the cacao nibs and mixed seeds.
Roll into balls and store in the fridge.
